Wait let me check my phone..
After apologizing profusely.. I asked what I could do to make it up to her.. She goes on and on about something.. too bad I don’t hear a word she says because I’m too busy throwing pillows off the sofa and digging through my closet looking for that damn phone. It was discovered much later.. in the trash can.. because I have this 2 year old that lives in my house that thinks everything should be thrown in the trash…
“See mommy.. dirty..haha”
It was cute at first but now it’s getting out of control. It may be time for him to get his own place.
The next morning, I’m awakened by the smell of something burning.. so I grab my keys and an umbrella and make a mad dash down the stairs.. To find my daughter making pancakes..
“What do you think, should I add more cinnamon?”
“what are you doing?”
“you told me I could make pancakes”
“I did? When? Wait.. do you smell something burning?”
“yea, I figured that meant it was time to turn them over”
Needless to say, we didn’t eat pancakes that morning. Together we pulled out some leftover potatoes and peppers and made this ridiculously easy hash. I was going to name it “The remember promises you make to your kids hash” or “Use all leftover vegetables before they go bad hash ”
But those names were taken.

These are flavorful hash browns with a bit of a Cajun-like seasoning combination mixed in. Take it up a notch by adding more cayenne or Tony’s seasoning to give it more heat. Top with a runny egg situation and you’ve got yourself a solid plate of hash brown breakfast greatness.
