Skillet Apple Crisp

Confession of a southern girl… 
It’s extremely difficult to for me to keep up with things… I am one of those people that takes on way more than they should.. Hence the somewhat distance space between post.. I’m trying to do better about this.. Truly… but seems like, as soon as I pull out the flour, eggs and check the camera …someone calls me with some issue, event, happening, catastrophe.. that of course needs my immediate attention.. that leads me to drop everything.. and  later forget what I had even planned to cook in the first place… Oh and then there is that thing called “my job” that takes up at least 40 hours a week…so when I do cook..I’ll eat, savor, refrigerate and repeat… and in retrospect think about how excellent the dish would have been to blog about..
I’m gonna do better.. maybe…
This time of the year as the weather turns cold...will help.. mainly because... I really dislike going out in the cold..it could be more that I'm a bit lazy and cold makes it worse because what could be better than laying around in a cozy sweater by the fire place watching the entire 1st season of Game of Thrones..

Maybe if I was sitting by that fire eating Skillet Apple Crisp…and ice cream…

You might need these:

5 large apples peeled and sliced.. I used Granny Smith (3) and Braeburn (2) (it's what I had on hand)
1 cup light brown sugar, divided
1 tablespoon cornstarch 
1 teaspoon vanilla extract
1 teaspoon ground cinnamon, divided
1/2 teaspoon salt
1/4 teaspoon apple pie spice
3/4 cups old-fashion rolled oats
1/2 cup all-purpose flour
1/3 cup chopped pecans
1/4 cup butter, cut into squares
Preheat oven to 375. Spray 8in cast iron skillet (or 8x8in baking dish) with non-stick cooking spray.
In a large bowl, stir together the apples, 1/2 cup of the brown sugar, cornstarch, vanilla, 1/2 teaspoon of the cinnamon, salt, and apple pie spice.
In a medium bowl, combine oats,  flour, remaining 1/2 cup of brown sugar and 1/2 teaspoon of cinnamon. Using a pastry blender (or fork) cut in butter until mixture resembles coarse crumbs.
Pour apple mixture into prepared skillet or pan. Sprinkle oat mixture over apples.
Bake for 40-45 minutes or until golden brown and bubbly.. 

Don't forget the ice cream..
